In a pan, heat the oil and gently brown the peeled garlic clove, lightly crushed with the palm of your hand. Add the dried fruit and capers and saut\u00e9 for a couple of minutes. Remove the seeds from the cherry tomatoes, cut them into small pieces and pour them into the pan, add a moderate amount of salt and cook for four or five minutes. Finally, add the pitted olives, a pinch of oregano and the parsley; after allowing the flavors to blend, turn off the heat and cover.    <\/p>\n<p>When the pasta is cooked, drain it al dente, transfer it to a large pan, pour in the sauce and mix well. Serve on individual plates, taking care to collect the sauce with a spoon and distribute it evenly. <\/p>\n<p>The name of the dish, perhaps not very appealing (Mrs. Angela, who provided the recipe, now prefers to present it as &#8220;Christmas spaghetti&#8221;), is nevertheless significant: it is a &#8220;thrifty&#8221; sauce, made with dried fruit left over from Christmas lunch, with aromatic herbs and with Vesuvius piennolo tomatoes preserved for the winter and, therefore, even more flavorful.
