Wash them, dry them, and clean them carefully. Peel them, leaving a little of the white pith. Drop them into plenty of boiling water and cook for 3 minutes. Then weigh the peels and place them in a small saucepan, just covered with cold water and with an amount of sugar equal to their weight.<br \/>\nCook over very low heat, stirring, until the sugared water is completely absorbed.
