Mix the grated Parmesan cheese, breadcrumbs, and grated lemon zest on a work surface; add the eggs, salt, pepper, and nutmeg, and knead until you obtain a firm, compact dough. If necessary, add more breadcrumbs and Parmesan, but always maintain a one-to-one ratio of cheese to breadcrumbs.  <\/p>\n<p>Strain the broth, bring it to a boil and, by pressing the dough through the specific tool or a large-hole potato ricer, form thick noodles a few centimeters long and let them drop directly into the pot. Lower the heat so that the broth does not boil too vigorously, and remove the pasta as soon as it rises to the surface (do not cook for more than a couple of minutes). <\/p>\n<p>Serve the passatelli piping hot in soup bowls; they are also excellent reheated.<\/p>\n<p>The secret to passatelli lies in kneading the ingredients well on a hard surface, rather than simply mixing them in a bowl, and in respecting the one-to-one ratio of cheese to breadcrumbs. A traditional Sunday dish, in recent years passatelli have also been served &#8220;dry&#8221; (without broth).
