aliments quand ceux-ci d\u00e9passent leur date de p\u00e9remption ou leur date d\u2019utilisation optimale, fix\u00e9e par les producteurs.<\/p>\n<p>Nous avons s\u00e9lectionn\u00e9 les produits \u00e0 tester parmi ceux qui posent le plus de probl\u00e8mes de conservation et nous avons voulu les soumettre au jugement de go\u00fbteurs fusion-text-5\"><p>L\u2019industrie alimentaire, premier secteur manufacturier \u00e0 l\u2019\u00e9chelon europ\u00e9en et deuxi\u00e8me \u00e0 l\u2019\u00e9chelon national, constitue \u00e9galement l\u2019un des secteurs qui produit le plus de d\u00e9chets. D\u2019apr\u00e8s une \u00e9tude r\u00e9cente de la FAO (2011), les gaspillages alimentaires dans le monde sont estim\u00e9s \u00e0 <strong>1,3 milliard de tonnes par an<\/strong>, ce qui \u00e9quivaut \u00e0 environ un tiers de la production globale alimentaire destin\u00e9e \u00e0 l\u2019homme. Ces donn\u00e9es confirment ce qu\u2019a mis en \u00e9vidence une \u00e9tude pr\u00e9c\u00e9dente (Smil, 2004) qui \u00e9valuait qu\u2019au niveau mondial<strong> seulement 43% des produits cultiv\u00e9s dans un but alimentaire \u00e9taient effectivement consomm\u00e9s<\/strong>. Les causes de ces pertes se diff\u00e9rencient en fonction de la zone consid\u00e9r\u00e9e : dans un pays en voie de d\u00e9veloppement, les pertes se concentrent, en effet, dans la premi\u00e8re partie de la fili\u00e8re agroalimentaire, tandis que dans un pays industrialis\u00e9, la majeure partie du gaspillage est produite dans les derni\u00e8res phases.<\/p>\n<p>Il n\u2019existe pas de d\u00e9finition univoque du gaspillage alimentaire, ni au niveau institutionnel, ni au niveau de la litt\u00e9rature scientifique. La FAO a identifi\u00e9 une premi\u00e8re d\u00e9finition du Food Waste et a inclus dans cette cat\u00e9gorie: \u00ab la partie des produits comestibles destin\u00e9s \u00e0 la consommation humaine qui est jet\u00e9e, perdue, d\u00e9grad\u00e9e ou consomm\u00e9e par des parasites dans n\u2019importe quelle phase de la fili\u00e8re agroalimentaire \u00bb (FAO, 1981).<br \/>\nUne \u00e9tude de 2011, men\u00e9e par la Swedish Institute for Food and Technology, propose \u00e9galement une distinction entre :<\/p>\n<ul>\n<li><strong>Food losses <\/strong>: pertes alimentaires qui se produisent durant les phases de production agricole, apr\u00e8s r\u00e9colte et transformation des aliments. Elles d\u00e9pendent principalement des techniques agricoles, des infrastructures, des facteurs climatiques et environnementaux, des surplus de production et du respect des standards de production et des r\u00e9glementations.<\/li>\n<li><strong>Food waste<\/strong> : d\u00e9chets qui sont produits durant la phase de transformation industrielle, la distribution et la consommation finale. Leurs causes sont multiples et vont des limites techniques et structurelles de la phase de transformation et de distribution, jusqu\u2019aux aspects li\u00e9s aux surplus d\u2019achats de la part du consommateur et aux erreurs dans la conservation des aliments. Il est n\u00e9cessaire de pr\u00e9ciser que dans le cas du Food waste, l\u2019on consid\u00e8re uniquement les produits, qui au lieu d\u2019\u00eatre destin\u00e9s \u00e0 la consommation humaine, sont utilis\u00e9s dans l\u2019alimentation animale ou les sous-produits des aliments utilis\u00e9s dans des pr\u00e9parations non alimentaires.<\/li>\n<\/ul>\n<p>Une \u00e9tude de la Barilla Center for Food &amp; Nutrition, men\u00e9e en 2012, a analys\u00e9 toutes les phases de la fili\u00e8re agroalimentaire de fa\u00e7on \u00e0 v\u00e9rifier les diff\u00e9rentes responsabilit\u00e9s dans la formation de Food losses et de Food waste. Six phases principales ont \u00e9t\u00e9 mises en \u00e9vidence :<\/p>\n<ul>\n<li><strong>culture, production agricole et r\u00e9colte<\/strong> : les pertes sont dues principalement aux conditions climatiques, aux techniques agricoles utilis\u00e9es et aux standards de production.<\/li>\n<li><strong>premi\u00e8re transformation et transformation industrielle<\/strong> : o\u00f9 il peut y avoir des d\u00e9chets de type physiologique ou dus \u00e0 une limitation des techniques et des technologies utilis\u00e9es dans la transformation alimentaire.<\/li>\n<li><strong>distribution<\/strong> : la majeure partie du gaspillage est li\u00e9e aux produits invendus pour diff\u00e9rentes raisons (strat\u00e9gies de marketing, r\u00e9glementations, standards esth\u00e9tiques et de qualit\u00e9).<\/li>\n<li><strong>restauration et consommation domestique <\/strong>: li\u00e9s aux achats excessifs de nourriture qui d\u00e9passe bien souvent sa date de p\u00e9remption sans avoir \u00e9t\u00e9 consomm\u00e9e.<\/li>\n<\/ul>\n<p>En Italie, jusqu\u2019il y a peu, le probl\u00e8me des d\u00e9chets produits le long de la fili\u00e8re alimentaire n\u2019\u00e9tait pas tout \u00e0 fait pris en consid\u00e9ration. Les premi\u00e8res donn\u00e9es sur le sujet datent de 2011, o\u00f9 l\u2019on estime le gaspillage, du champ au point de vente, \u00e0 environ 20 millions de tonnes de nourriture. Sur la base des donn\u00e9es relev\u00e9es par l\u2019ISTAT en 2009, il a \u00e9t\u00e9 possible de quantifier le pourcentage de la production agricole rest\u00e9e dans les champs \u00e0 3,25% du total de la production.<\/p>\n<p>Dans l\u2019industrie alimentaire, au contraire, le gaspillage moyen s\u2019\u00e9l\u00e8ve \u00e0 2,6% du total (environ 1,9 million de tonnes de nourriture), r\u00e9partis sur les divers types de transformation. L\u2019impact majeur est \u00e0 attribuer \u00e0 la transformation et \u00e0 la conservation de fruits et l\u00e9gumes, suivi par le secteur laitier-fromager et par le secteur des glaces. Les produits \u00e9cart\u00e9s au cours ces phases peuvent faire l\u2019objet d\u2019erreurs durant les proc\u00e9d\u00e9s de transformation et, suite aux d\u00e9fauts engendr\u00e9s, ils ne r\u00e9sultent plus conformes aux standards de production. En g\u00e9n\u00e9ral, ils sont trait\u00e9s comme des d\u00e9chets ou utilis\u00e9s pour la production d\u2019aliments pour animaux (Segr\u00e8 et Falasconi, 2011).<\/p>\n<p><strong>En 2009, en Italie, environ 260 000 tonnes de produits alimentaires finis ont \u00e9t\u00e9 gaspill\u00e9s de cette fa\u00e7on, <\/strong>dont environ 40% \u00e9tait des produits horticoles.<\/p>\n<p>Les volumes importants de d\u00e9chets produits le long de la fili\u00e8re alimentaire entra\u00eenent diff\u00e9rents types de probl\u00e8mes :<\/p>\n<ul>\n<li><strong>\u00e9conomiques<\/strong> : le traitement des d\u00e9chets entra\u00eene un co\u00fbt suppl\u00e9mentaire pour les entreprises de production ;<\/li>\n<li><strong>environnementaux<\/strong> : dus aux \u00e9missions de gaz \u00e0 effet de serre durant les phases de d\u00e9composition de ces d\u00e9chets ;<\/li>\n<li><strong>\u00e9thiques et sociaux<\/strong> : les volumes importants de denr\u00e9es alimentaires gaspill\u00e9es pourraient \u00eatre r\u00e9utilis\u00e9es par les personnes en grande difficult\u00e9, qui n\u2019ont pas la possibilit\u00e9 de se nourrir r\u00e9guli\u00e8rement (probl\u00e8me de d\u00e9nutrition, faim dans le monde). \u00c0 ce propos, il est utile de faire remarquer qu\u2019un tiers des denr\u00e9es alimentaires produit globalement est \u00ab perdu \u00bb, tandis que les statistiques totalisent environ 860 millions de personnes qui souffrent la faim dans le monde (www.fao.org).<\/li>\n<\/ul>\n<\/div><\/div><\/div><\/div><\/div><div class=\"fusion-fullwidth fullwidth-box fusion-builder-row-6 l\u2019avons d\u00e9j\u00e0 mis en \u00e9vidence pr\u00e9c\u00e9demment, l\u2019une des phases qui contribuent \u00e0 la production de d\u00e9chets est celle de la distribution et, en particulier, la phase finale, o\u00f9 il y a destruction, non seulement des produits d\u00e9fectueux, et donc non vendables, mais aussi les produits qui n\u2019ont plus de d\u00e9bouch\u00e9s sur le march\u00e9 car ils sont proches de leur date d\u2019\u00e9ch\u00e9ance.<\/p>\n<p>Le consommateur moyen, en effet, \u00e9vite d\u2019acheter des produits qui sont proches de leur date de p\u00e9remption, car il estime qu\u2019ils ne sont plus propres \u00e0 la consommation, causant ainsi leur retrait du march\u00e9 et leur \u00e9limination, ce qui entra\u00eene des pertes \u00e9conomiques et sociales \u00e9videntes.<\/p>\n<p>Le but de ce projet a ainsi consist\u00e9 \u00e0 v\u00e9rifier et \u00e0 d\u00e9montrer si\/comment une denr\u00e9e alimentaire, bien que proche de sa date de p\u00e9remption, peut ne pas avoir subi de modifications quant \u00e0 sa composition, \u00e0 ses caract\u00e9ristiques microbiologiques et sensorielles et peut, donc, \u00eatre achet\u00e9e et consomm\u00e9e tout comme un autre produit dont la durabilit\u00e9 est plus \u00e9tendue.<\/p>\n<\/div><\/div><\/div><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-10 fusion-text-7\"><p>L\u2019enqu\u00eate a \u00e9t\u00e9 effectu\u00e9e sur <strong>six denr\u00e9es de consommation courante avec des dates de p\u00e9remption variables, allant de quelques jours \u00e0 quelques mois <\/strong>(lait UHT, p\u00e2te feuillet\u00e9e, yaourt \u00e0 la fraise, lait pasteuris\u00e9, p\u00e2tes fra\u00eeches farcies, jambon cuit en d\u00e9s).<\/p>\n<p>Pour chaque type de produits, diff\u00e9rentes confections appartenant au m\u00eame lot et dont la durabilit\u00e9 indiqu\u00e9e \u00e9tait la plus \u00e9tendue parmi les confections disponibles ont \u00e9t\u00e9 achet\u00e9es dans un grand supermarch\u00e9 pr\u00e8s de Turin.<\/p>\n<p>Pour certains produits (lait UHT, lait pasteuris\u00e9, jambon cuit, p\u00e2tes farcies), ce sont ceux de deux entreprises de production diff\u00e9rentes, toutes deux disponibles aupr\u00e8s du point de vente, qui ont \u00e9t\u00e9 examin\u00e9s.<\/p>\n<p>Apr\u00e8s transfert aux laboratoires du DISAFA (transfert r\u00e9alis\u00e9 dans le respect la cha\u00eene du froid), les \u00e9chantillons ont \u00e9t\u00e9 conserv\u00e9s dans des conditions appropri\u00e9es \u00e0 chacun des produits.<\/p>\n<p>En particulier, le lait UHT a \u00e9t\u00e9 conserv\u00e9 \u00e0 20\u00b0C tandis que toutes les autres denr\u00e9es ont \u00e9t\u00e9 mises en cellule frigorifique \u00e0 +5\u00b0C.<\/p>\n<p>Les analyses ont \u00e9t\u00e9 effectu\u00e9es dans le but d\u2019\u00e9valuer les indices de composition, les indices microbiologiques et sensoriels susceptibles de mettre en \u00e9vidence une \u00e9volution du produit durant sa conservation, ainsi que la pr\u00e9sence de diff\u00e9rences significatives entre le produit \u00e0 la fin de sa p\u00e9riode de durabilit\u00e9 et ce m\u00eame produit \u00e0 l\u2019\u00e9tat frais.<\/p>\n<p>Dans ce but, les \u00e9valuations ont \u00e9t\u00e9 effectu\u00e9es sur le produit frais \u00e0 peine achet\u00e9, durant la p\u00e9riode de conservation \u00e0 intervalles r\u00e9guliers &#8211; plus ou moins espac\u00e9s selon la durabilit\u00e9 indiqu\u00e9e par le producteur &#8211; et \u00e0 la DLC ou DLUO (date limite de consommation ou date limite d\u2019utilisation optimale), ou le lendemain.<\/p>\n<p>En ce qui concerne les indices chimiques et physiques, ce sont les param\u00e8tres de couleur CieLab, le pH, la structure, l\u2019eau libre (aw) et le graphique des composants volatiles au moyen d\u2019un nez \u00e9lectronique qui ont \u00e9t\u00e9 \u00e9valu\u00e9s.<\/p>\n<p>D\u2019autre part, pour ce qui est des param\u00e8tres microbiologiques, l\u2019attention a \u00e9t\u00e9 port\u00e9e sur la mesure de la charge bact\u00e9rienne totale, des levures, des coliformes et des bact\u00e9ries lactiques.<\/p>\n<p>Les param\u00e8tres chimiques, physiques et microbiologiques utilis\u00e9s pour chacun des aliments ont, bien s\u00fbr, \u00e9t\u00e9 choisis en fonction du type d\u2019aliment consid\u00e9r\u00e9, d\u2019apr\u00e8s le tableau suivant :<\/p>\n<\/div><\/div><\/div><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-12 fusion_builder_column_1_3 1_3 \u00e9t\u00e9 effectu\u00e9e au moyen d\u2019un spectrocolorim\u00e8tre Minolta CM-5, en utilisant une cuvette de 1 cm de parcours optique pour les liquides, ou une sph\u00e8re int\u00e9gratrice pour les solides.<\/p>\n<p>L\u2019analyse du pH a \u00e9t\u00e9 effectu\u00e9e au moyen d\u2019un pHm\u00e8tre Crison GLP21 avec des \u00e9lectrodes pH 50-15 directement sur le produit pour les liquides ou, pour les solides, en mesurant la valeur du pH de la suspension obtenue apr\u00e8s m\u00e9lange de 10 g d\u2019\u00e9chantillons dans 100 ml d\u2019eau distill\u00e9e.<\/p>\n<p>La d\u00e9termination de l\u2019aw a \u00e9t\u00e9 effectu\u00e9e avec un instrument AquaLab, tandis que pour la structure l\u2019on a utilis\u00e9 un Texture Analyser TAXT2 avec une sonde HDP\/TPB ont \u00e9t\u00e9 effectu\u00e9es trois fois.<\/p>\n<p>Dans le cas des analyses microbiologiques, diff\u00e9rents protocoles d\u2019analyses ont \u00e9t\u00e9 suivis en fonction de la typologie des microorganismes \u00e0 mettre en \u00e9vidence. En particulier, pour la num\u00e9ration a\u00e9robie totale, l\u2019on a utilis\u00e9 les bo\u00eetes de P\u00e9tri PCA (Plate Count Agar, Oxoid) qui ont \u00e9t\u00e9 incub\u00e9es \u00e0 30\u00b0C pendant 48h. Les coliformes ont \u00e9t\u00e9 recherch\u00e9s dans des bo\u00eetes de P\u00e9tri VRBL (Violet Red Bile Lactose Agar, Oxoid) incub\u00e9es \u00e0 37\u00b0C pendant 24h, tandis que les bact\u00e9ries lactiques ont \u00e9t\u00e9 recherch\u00e9es dans des bo\u00eetes de P\u00e9tri MRS (Oxoid) incub\u00e9es \u00e0 37\u00b0C pendant 48h. Enfin, pour les levures et les moisissures, l\u2019on a utilis\u00e9 Agar Malto (Oxoid) et les bo\u00eetes de P\u00e9tri ont \u00e9t\u00e9 incub\u00e9es \u00e0 30\u00b0C pendant 5 jours.<\/p>\n<p>Les analyses sensorielles ont \u00e9t\u00e9 r\u00e9alis\u00e9es par un groupe de 5 go\u00fbteurs travaillant aupr\u00e8s du DISAFA, avec une longue exp\u00e9rience en la mati\u00e8re.<\/p>\n<p>Ne pouvant effectuer des tests de discrimination de type qualitatif du fait que ceux-ci ne sont pas applicables \u00e0 un suivi de la durabilit\u00e9, l\u2019on a opt\u00e9 pour des tests de discrimination de type quantitatif en identifiant des descripteurs de qualit\u00e9 du produit \u00e0 \u00e9valuer sur une \u00e9chelle de go\u00fbt allant 1 \u00e0 9 . <strong>(Figure 5).<\/strong><\/p>\n<p>L\u2019\u00e9valuation a \u00e9t\u00e9 compl\u00e9t\u00e9e par une question sur la disponibilit\u00e9 \u00e0 l\u2019achat du produit.<\/p>\n<p>Tous les produits ont \u00e9t\u00e9 trait\u00e9s de mani\u00e8re anonyme et tels quels, sans pr\u00e9paration, except\u00e9 dans le cas des p\u00e2tes farcies, qui ont \u00e9t\u00e9 cuites dans de l\u2019eau naturelle Valmora sans adjonction de sel et durant environ 2 \u00e0 5 minutes.<\/p>\n<p><strong>L\u2019examen sensoriel de la p\u00e2te feuillet\u00e9e n\u2019a pas \u00e9t\u00e9 possible car il aurait fallu la pr\u00e9parer et, dans ce cas, l\u2019utilisation d\u2019autres ingr\u00e9dients aurait interf\u00e9r\u00e9 sur les caract\u00e9ristiques du produit.<\/strong><\/p>\n<\/div><\/div><\/div><\/div><\/div><div class=\"fusion-fullwidth fullwidth-box fusion-builder-row-17 fusion-flex-container has-pattern-background has-mask-background nonhundred-percent-fullwidth non-hundred-percent-height-scrolling\" Une autre diff\u00e9rence est particuli\u00e8rement \u00e9vidente en ce qui concerne la couleur : le produit de la marque 2 est plus clair pour ce qui est des tonalit\u00e9s rouge (a*) et jaune (b*).<\/p>\n<p>En ce qui concerne l\u2019examen sensoriel, le tableau suivant reporte les valeurs moyennes calcul\u00e9es sur des \u00e9chantillons examin\u00e9s au moment de l\u2019achat et \u00e0 la la conservation n\u2019engendre pas de variations significatives du degr\u00e9 de satisfaction et la propension \u00e0 l\u2019achat reste inchang\u00e9e. L\u2019insatisfaction g\u00e9n\u00e9rale est \u00e0 imputer au type particulier de produit (lait UHT demi-\u00e9cr\u00e9m\u00e9) qui s\u2019av\u00e8re peu savoureux et dont la structure en bouche est faible.<\/p>\n<p>Une petite diff\u00e9rence appara\u00eet entre les deux marques en ce qui concerne les jugements de couleur et le degr\u00e9 de satisfaction globale, peut-\u00eatre \u00e0 cause de la couleur moins ambr\u00e9e qui caract\u00e9rise le produit de la marque 2.<\/p>\n<p>Les r\u00e9sultats fournis par le nez \u00e9lectronique<strong> (Figure 6)<\/strong> mettent en \u00e9vidence que les graphiques des deux produits ne subissent pas de variations significatives \u00e0 l\u2019issue du proc\u00e9d\u00e9 de conservation et confirment ainsi les r\u00e9sultats obtenus suite aux autres d\u00e9terminations chimiques, physiques ou microbiologiques.<\/p>\n<p>Les graphiques des deux produits sont, par contre, de forme tr\u00e8s diff\u00e9rente. Celui de la marque 1 s\u2019av\u00e8re irr\u00e9gulier avec des valeurs tr\u00e8s \u00e9lev\u00e9es au niveau des senseurs 2 et 7. Dans le cas de la marque 2, le profil est plus r\u00e9gulier avec une intensit\u00e9 tr\u00e8s faible au niveau de tous les senseurs. Ces diff\u00e9rences d\u00e9pendent des choix op\u00e9r\u00e9s initialement par les entreprises de production et ne sont pas influenc\u00e9es par la conservation.<\/p>\n<\/div><\/div><\/div><\/div><\/div><div class=\"fusion-fullwidth fullwidth-box fusion-builder-row-23 fusion-flex-container has-pattern-background has-mask-background \u00e9t\u00e9 relev\u00e9e pour les laits UHT, l\u2019on constate une similarit\u00e9 \u00e9vidente entre les deux marques, ainsi que l\u2019absence de diff\u00e9rences li\u00e9es \u00e0 la Parall\u00e8lement, aucune augmentation des coliformes, potentiellement nocifs, n\u2019est \u00e0 signaler. L\u2019on peut donc consid\u00e9rer l\u2019\u00e9volution du produit comme physiologique et acceptable. Lors de cette analyse, seulement deux marques de produit ont \u00e9t\u00e9 prises en consid\u00e9ration et il n\u2019est donc pas possible d\u2019en tirer une r\u00e8gle g\u00e9n\u00e9rale.<\/p>\n<p>Les r\u00e9sultats fournis par le nez \u00e9lectronique <strong>(Figure 8)<\/strong> mettent en \u00e9vidence des diff\u00e9rences remarquables entre les deux produits en ce qui concerne tant la forme du graphique que l\u2019intensit\u00e9 du signal capt\u00e9 par les diff\u00e9rents senseurs. Cela ne g\u00e9n\u00e8re pas d\u2019effets particuliers pour le consommateur, vu que le produit doit \u00eatre consomm\u00e9 apr\u00e8s cuisson.<\/p>\n<p>Du point de vue de la composante volatile, le graphique est semblable pour les deux marques mais avec une diff\u00e9rence significative du point de vue quantitatif<strong> (Figure 12<\/strong>), attribuable \u00e0 la diff\u00e9rence de durabilit\u00e9.<\/p>\n<p>Les deux produits se sont av\u00e9r\u00e9s tous deux agr\u00e9ables du point de vue sensoriel, avec toutefois une l\u00e9g\u00e8re pr\u00e9f\u00e9rence pour la marque 1. La propension \u00e0 l\u2019achat du produit reste bonne, \u00e9galement \u00e0 la fin de la p\u00e9riode de durabilit\u00e9. Il faut faire remarquer que le produit a \u00e9t\u00e9 consomm\u00e9 apr\u00e8s cuisson et, de ce fait, l\u2019effet de l\u2019augmentation de la charge bact\u00e9rienne n\u2019est plus la tonalit\u00e9 rouge (a*) et une augmentation y relative de la tonalit\u00e9 jaune (b*), ce qui cause une augmentation du DE d\u2019ailleurs nettement inf\u00e9rieur \u00e0 3, limite de la perception visuelle humaine.<\/p>\n<p>Ce ph\u00e9nom\u00e8ne, normal, est d\u00fb \u00e0 une d\u00e9gradation dans le temps des pigments anthocyanes rouges du fruit ajout\u00e9 (la fraise) \u00e0 cause de l\u2019acidit\u00e9 du produit.<\/p>\n<p>La r\u00e9duction de la charge bact\u00e9rienne qui peut s\u2019observer durant la conservation est tout aussi normale ; elle se maintient d\u2019ailleurs au-dessus des limites fix\u00e9es par la loi, m\u00eame \u00e0 proximit\u00e9 de la date de p\u00e9remption.<\/p>\n<p>Le maintien des composants et des caract\u00e9ristiques microbiologiques est confirm\u00e9 par la fraction volatile enregistr\u00e9e par le nez \u00e9lectronique qui met en \u00e9vidence une superposition parfaite des deux graphiques au cours de la conservation du produ<strong>it (Figure <\/strong>13).<\/p>\n<\/div><\/div><\/div><\/div><\/div><div class=\"fusion-fullwidth fullwidth-box fusion-builder-row-53 fusion-flex-container
