Clean the cauliflower, removing the core and the tougher outer leaves, wash it and boil it in salted water. Drain it, let it cool and divide it into florets, which you will transfer to a salad bowl with the drained pepper cut into strips, the gherkins, the olives (preferably pitted), and the desalted capers. Also add the boned anchovies, well washed, dried and broken into pieces.

Season with a little vinegar, plenty of oil and mix.

Traditional Campanian dish for Christmas Eve. The name derives from the fact that tradition dictates that leftovers be “reinforced” to consume them on New Year’s Day. As the days go by, the preparation gains more and more flavor, with the new ingredients blending with the dressing.
