To candy the peels, use citrus fruits with fairly thick and uniform skin. Wash them, dry them, and clean them carefully. Peel them, leaving a little of the white pith. Drop them into plenty of boiling water and cook for 3 minutes. Then weigh the peels and place them in a small saucepan, just covered with cold water and with an amount of sugar equal to their weight.
Cook over very low heat, stirring, until the sugared water is completely absorbed. Let them dry on a surface lightly sprinkled with sugar.
If you prefer, you can then glaze them with hot chocolate.
