Preparation
Vigorously beat the egg yolks with the salt; add the cheeses – the hard or semi-hard ones grated, the others cut into small pieces –, the grated lemon zest, the breadcrumbs, pepper, a pinch of cinnamon and one of nutmeg. Mix everything well and finally fold in the egg whites beaten until stiff.
Pour the mixture into a buttered cake pan and bake at 180°C for 20 minutes.
