Soak the bread crumbs in the cream. Toast the almonds in the oven, peel them, and chop them coarsely.

Add the vanilla seeds, grated orange zest, egg yolks, beaten egg whites, and finally the chocolate flakes to the bread and cream mixture. Pour the mixture into a previously buttered pudding mold and bake in the oven at 160°C for 40 minutes.

This can be a delicious way to use leftover bread. A more traditional recipe combines bread crumbs softened in milk with raisins and candied fruit; the mixture is then flavored with cinnamon, sometimes adding a small glass of brandy or grappa.
