Create a well with the flour on a pastry board. Thoroughly moisten the stale bread and place it in the center of the well. Knead the mixture, adding more water if necessary, to obtain a well-blended and soft dough.
Take the resulting dough and cut it into pieces: work each piece until it becomes a long rope. Divide it into segments of about one centimeter. Using your index finger, press down in the center of each gnocchetto to thin it out slightly and ensure even cooking.
Boil them for fifteen minutes and, once cooked, drain them with a slotted spoon and season to taste.
