Wash the peels thoroughly, boil them in salted water, drain and dry them. Pass them through a food mill with fine holes, then combine them with the eggs, béchamel sauce (it must be very thick) and grated Parmesan cheese.
Form a homogeneous mixture, mixing well with a ladle, and pour the batter into individual round molds, buttered and floured. Bake in a bain-marie in the oven at 160°C for half an hour and wait about ten minutes before unmolding.
For this recipe it is essential to verify the origin of the fava beans: they must not have undergone chemical treatments nor have grown near sources of pollution. For the béchamel sauce you will need milk, butter, wheat flour, salt and nutmeg.
