Crumble the stale bread in a bowl and moisten it with a little water.
Wash and clean the tomatoes, place them in a tall container with salt, a little oil, and basil, and blend them. Add this tomato juice to the bread and mix everything together.
In another bowl, work the ricotta until it becomes a cream, add this cream to the rest of the mixture and mix well. Form balls using both hands.
Roll them in a container where you have placed the sesame seeds, until the entire surface is covered.
If possible, let them rest in the fridge for half an hour, then skewer them with a toothpick as if they were lollipops and serve.
