Mix the rice with the butter, a level tablespoon of sugar, and the grated lemon zest. Add a splash of rum, three beaten egg yolks and, while stirring, the flour. Let the mixture rest for a few hours.

When ready to fry, beat the egg whites until stiff and fold them into the other ingredients, stirring gently from top to bottom.

Drop spoonfuls of the mixture into the hot oil and serve the fritters warm, dusted with powdered sugar.
