Cut the meat into cubes. Thinly slice the onions and sauté them in oil. Cook them for a long time, then add the peeled tomatoes crushed with a fork, add salt and mix over medium heat for about ten minutes. Add the meat and cover it with two or three ladles of broth. Add plenty of pepper and cook over very low heat until the broth has dried up (about 20 minutes). Serve the boiled meat with a salad of cooked or raw vegetables.

Lesso rifatto – or francesina – is a typical Tuscan “day after” dish that uses meat that has been boiled for broth or leftover boiled meat.
