Preparation
Put a little oil in a pan and brown the onion or leek, cut into thin rounds.
Add the peeled and seeded tomatoes. Season with a little salt. Bring to a boil and add the broth. When it returns to a boil, add the stale bread cut into slices. Cook everything for a couple of minutes. Add the basil and leave the pappa covered with a lid for about an hour.
Before serving, sprinkle with black pepper and mix all the ingredients together.
The pappa can be eaten lukewarm or reheated with the addition of a little raw oil on top.
