Blanch the peppers cut into strips in boiling water and vinegar. Drain them while still crisp and set aside. Cut the boiled meat into cubes or strips.

Sauté the chopped onion and garlic in a saucepan. Add the anchovies, desalted and filleted, then dissolve them without frying. Chop the parsley and add it to the rest with the capers after turning off the heat. Drizzle with a splash of vinegar.

Mix all the ingredients, adding a little oil and adjusting salt and pepper. Let rest for a few hours before serving.
