Remove the fatty parts from the boiled meat and chop the remaining meat into small pieces. Separately, wash the heart of a firm and fragrant celery and cut it into small pieces. Season with oil, salt, pepper and lemon to taste, at least half an hour before serving at a cool temperature.
If desired, canned cannellini beans can be added.
