Preparation
Finely mince the meat (both raw and cooked). Meanwhile, soak the stale bread in the milk. Mix the meat, bread, and other ingredients to obtain a well-blended and compact mixture, from which you will form many small balls. Bring the broth to a boil and cook the canederli for about 15 minutes over low heat. You can serve them directly in the broth or drained and seasoned to taste.
Drain them, place them on a sheet of paper towel, and serve hot on a platter.
