Preparation
Slice the eggplants thinly and let them drain briefly with a sprinkle of salt.
Prepare a mixture with the minced meat and ham, the beaten egg, the mozzarella, a generous handful of grated Grana cheese, salt, and pepper.
Mix well and use the filling to stuff the eggplant slices, securing them with toothpicks if necessary.
Place the bundles in a greased baking dish, add a few knobs of butter and the mint leaves, and bake at 160-180°C for about twenty minutes.
