Preparation
Wash the spring onions and cut them into rings. Remove the green core from the garlic and chop it. Take the herrings (those with roe have a stronger flavor) and cut them into strips.
Heat the chickpeas and mix them with the herrings, garlic, and spring onions, then season with oil, vinegar, salt, and a generous amount of pepper.
Serve the preparation warm, accompanied by slices of toasted Tuscan bread.
