Cooking without waste

200 g leftover macaroni with meat sauce, 300 g potatoes, one carrot, half an onion, half a celery stalk, a small piece of chili pepper, a small bunch of parsley, a few basil leaves, 50 g smoked pancetta, one Parmesan rind, tomato paste, 2 tablespoons extra virgin olive oil, salt.

Preparation

Prepare a soffritto with onion, carrot, celery and sauté it in oil, then add flavor with diced pancetta and chili pepper.

When everything is golden, add a tablespoon of tomato paste and the peeled and diced potatoes.

Cover with water, add the Parmesan rind after scraping it well with a small knife and washing it, then leave on the heat until the potatoes are almost cooked (about fifteen minutes).

Add the macaroni, stir to combine the two ingredients, adjust salt and finish, once the heat is off, with chopped parsley and basil.
