Preparation
Put a pot full of water on the stove with a pinch of salt. Add the stale bread and let it simmer over low heat for at least one hour, until you obtain a smooth cream. When serving, top with cheese and a knob of butter.
In a modern version, a grating of Parmesan works perfectly.
