Wash the pods thoroughly, remove the strings and inner membrane, plunge them into boiling salted water and drain after three to four minutes from when the water returns to a boil.

Once dried and cooled, season them with the minced garlic clove, salt, extra virgin olive oil and vinegar.

To prepare this recipe, ensure the peas are from a reliable source: they must not have been chemically treated or grown near sources of pollution.
