Cut the fatty parts into strips. With the leaner parts, make a mixture by adding an egg, bread crumbs, parsley and garlic, salt, pepper and grated cheese. With the mixture obtained, make small balls, coat them in flour and plunge them into boiling water. Remove them as soon as you see them rise to the surface.
In another saucepan, fry oil with onion and rosemary. Add the strips of fatty meat, the balls plunged in boiling water, the pickles (onions, mushrooms, gherkins), a splash of Marsala or Vin Santo and a few teaspoons of heated vinegar to which you will have added a little honey.
Cook everything for about ten minutes.
